Spaghetti with Shrimp and Coriander
Ingredients
1 pack spaghetti, 500 g1 kg shrimp, medium size½ cup corn oil 2 medium red peppers, cut into thin strips½ cup peanuts2/3 cup orange juice4 tbsp chili sauce, sweetened 1 cup fresh coriander leaves, chopped
Directions
1. In deep pan boil pasta in salted water until just tender. Drain and put aside.
2. Meanwhile, shell and devein shrimp leaving tails. In large wok heat half the oil, add shrimp, red pepper and peanuts and cook until shrimp changes color.
3. Add pasta, remaining oil, orange juice and chili sauce and cook for 5-7 minutes until shrimp is tender.
Onion Rings
Ingredients
3 large onions1 egg, beaten2 tbsp corn flour1 cup flour1 cup breadcrumbsSunflower oil for deep fryingSalt and pepper
Directions
1. Peel and wash onions.
2. Slice onions (5-7 slices each) then rub slices to form gradually sized rings. 3. Add salt and pepper to egg. In another bowl mix flour and corn flour and place breadcrumbs in a third bowl.
4. Taking one onion ring at a time; first dip in flour mixture then in egg and finally in breadcrumbs.
5. In a deep pan heat oil to very high heat. Add onion rings and deep-fry for 5-7 minutes until golden. Brownies
Ingredients
125 gm chocolate60 gm butter¾ cup sugar3 eggs1 cup flour½ tsp baking powder½ tsp salt½ cup walnuts or almonds chopped (optional)
Directions:
1. In a heatproof bowl, add chocolate and butter. Put bowl over a pan of boiling water and put over low heat. Leave until chocolate melts, stirring occasionally.
2. In a bowl, beat eggs and sugar with an electric beater until fluffy. Stir in melted chocolate gradually.
3. Sift flour, baking powder and salt. Stir into mixture with a wooden spoon. Add chopped walnuts or almonds.
4. Heat oven to 180° C. Butter a rectangular baking dish (20 x 30 cm). Spread mixture well in pan and even the surface. Bake in oven for 30-35 minutes.
5. Leave to cool for about 10 minutes. Cut into squares and serve warm or keep squares in a tight container.
